About
Food may be what guests remember first, but in hospitality, great food alone is never the full story.
I’m Chef Ali Zakari — a Head Chef, culinary strategist, and hospitality writer passionate about helping restaurants and hotels think beyond the plate. My work sits at the intersection of culinary creativity, kitchen operations, menu development, food cost awareness, and hospitality leadership.
Over the years, I have come to believe that strong hospitality businesses are not built on flavour alone. They are built on the systems, discipline, consistency, training, and operational clarity that support what leaves the kitchen every day. That belief is what shapes both my work in the kitchen and the ideas I share through this platform.
What I Do
I work across areas such as:
- Menu development and menu refinement
- Kitchen systems and operational structure
- Food cost awareness and practical kitchen efficiency
- Team leadership, training, and service readiness
- Afrofusion and contemporary culinary storytelling
- Hospitality writing and food business insight
About This Blog
Chef Ali’s Culinary Journal is where I share practical reflections and ideas around:
- restaurant and hotel kitchen systems
- menu performance and food business thinking
- culinary leadership and team development
- Afrofusion, storytelling, and the creative side of hospitality
Some articles explore the craft of food itself. Others examine the operational side of the kitchen — the systems, decisions, and habits that affect consistency, guest experience, and profitability behind the scenes.
The goal is simple: to create a space where food is not only celebrated for how it tastes, but also understood for the structure, discipline, and strategy required to deliver it well.
My Approach
I believe hospitality should be both creative and intentional.
A dish should carry flavour, identity, and memory.
A kitchen should run with clarity, discipline, and consistency.
And a hospitality business should understand that excellence is not only plated — it is also built into systems, training, communication, and leadership.
That is the perspective behind this journal.
